January marked one year since going paleo. ONE WHOLE YEAR. More than 30 pounds lost and so much gained. A whole new outlook on healthy living. An immense appreciation for the clean, wholesome food I eat. A fresh perspective on grocery shopping, ordering at a restaurant, reading labels, understanding ingredients, cooking for myself and my family, owning poor choices and rewarding good ones. I originally set out on the paleo journey to get back to a certain number on the scale. That quickly changed when I realized just how much adopting a paleo lifestyle was truly changing my life.
Hi friends, Happy New Year! It’s nearly February now, so I figured my holiday hiatus needed to come to a close. I’ve been itching to get back to all of you! I have a lot of fresh, fun content planned for 2018 and am kicking things off today with a favorite family recipe: my mom’s crockpot beef stew.
In our family, Dr. P is known for two things — bacon and guacamole — and I’ve been dying to share his guacamole recipe with all of you! This is such a party pleaser and the perfect dip for your Fourth of July table. Plus since it’s paleo, we make it several times a month. It’s delicious by itself but also a tasty addition to many foods we make on a regular basis like paleo burrito bowls, grilled chicken, cobb salad and even shrimp tacos… with jicama tortillas!
