One-Year Paleo Party with Primal Kitchen

January marked one year since going paleo. ONE WHOLE YEAR. More than 30 pounds lost and so much gained. A whole new outlook on healthy living. An immense appreciation for the clean, wholesome food I eat. A fresh perspective on grocery shopping, ordering at a restaurant, reading labels, understanding ingredients, cooking for myself and my family, owning poor choices and rewarding good ones. I originally set out on the paleo journey to get back to a certain number on the scale. That quickly changed when I realized just how much adopting a paleo lifestyle was truly changing my life.

I surpassed my goal weight many months ago. I was so focused on eating healthy, working out regularly and continuing down the paleo path, the number on the scale didn’t matter anymore. The trick was BALANCE. I learned what worked for me and what didn’t. I kept my workouts steady and my rest important. The weekends always included a cheat meal, usually with some wine, because I need the wiggle room to stay focused.

In November, I saw a number on the scale that I hadn’t seen since high school. I remember thinking in that moment that my body is truly a gift. Just two years ago, I gave birth to our baby boy and now I’m healthier and stronger than ever. Focusing on my health has provided a whole new level of happiness that I didn’t know I needed, and frankly, that I didn’t know I could achieve.

And now it’s time to pay it forward.

The chipotle lime mayo from Primal Kitchen is the ultimate creamy condiment (with a kick!) that you won’t feel guilty about. I love adding it to tuna salad, egg salad, burgers, roasted vegetables and baked fish, too.

Here’s my version of paleo-approved chicken salad. And don’t forget to scroll down for the giveaway!

– 1 large rotisserie chicken, shredded
– 10 tablespoons (5 oz) Primal Kitchen chipotle lime mayo
– Fresh lemon juice
– 1 bunch of chopped scallions
– 3 stalks of chopped celery
– 2 hard boiled eggs
– Salt and pepper
– Primal Kitchen avocado oil

In a large bowl, combine the shredded rotisserie chicken (without skin), chopped scallions, chopped celery, hard boiled eggs and chipotle lime mayo. Add the juice of 1/2 a lemon, 1 teaspoon of salt and 1 teaspoon of pepper. Stir to combine. Chill and serve in a leafy lettuce wrap, over a bed of greens or with some crunchy cucumber slices! I like to drizzle avocado oil and sprinkle a bit of black pepper on top right before serving. No question your whole family will enjoy this chicken salad recipe for meals and snacks! I promise you won’t even realize it’s paleo.
