In order to make mid-week breakfasts a little simpler, I’ve been making breakfast casseroles on Sundays for an easy grab-and-go solution. It’s been fun experimenting with different ingredients and they’re so simple to make! Here’s a good one that will feed a bunch, but I can’t guarantee it’ll last too long!
– Seasoned french fries
– 8 strips of cooked bacon
– 6 – 8 eggs
– 1/2 cup milk (you can substitute with almond milk if you prefer)
– 1 cup shredded cheddar cheese
– Salt and pepper to taste
Grease a 9×13 baking dish and preheat the oven to 375 degrees Fahrenheit. Cut raw strips of bacon into thirds and fry until nice and crispy.
Layer seasoned fries on bottom of baking dish to create a base. Sprinkle half the cheese over the fries then layer bacon evenly over the top.
In a mixing bowl, beat eggs and milk together. Pour over the baking dish and top with the rest of the cheese. Bake for 35 – 45 minutes. I checked the dish about every 5 minutes after the half-hour mark since I wanted a nice golden crust on top.
We couldn’t resist a little taste of course!
