The summer heat has hit us pretty hard in Texas and despite the deluge of rain we’ve seen lately, the heat is here and ready to stay. I find myself dreaming of long weekends seaside and am yearning for a mini-getaway soon to soak in the sun. But until I can sit in the sand with a cold drink in hand, I’m coming up with some creative ways to cool down in the kitchen.
I’ve always been a sucker for the frozen section, picking up sweet treats to have on hand for those hot summer nights, especially fruity-flavored ice pops. But most of those options have added sugar and other ingredients that aren’t whole and clean. So I figure, why not take a stab at crafting some homemade ice pops throughout the next few months?!
Using plastic molds that easily fit in the freezer (like these cute ones), this seriously couldn’t be simpler. We had some fresh watermelon on hand which I blended up to a liquid, pouring over some whole blueberries for bursts of color and flavor. And yes, that’s it! You don’t need anything else besides some patience as they freeze up into tasty sweet treats!
