Cocktail Hour: Pina Colada

The past few days I haven’t been feeling so well and it’s been tough to focus on work and things around the house. However, tomorrow we’re heading for our last summer fling at the coast with the family. I’ve been excited but barely have had the energy to pack.

However, Jimmy Buffet’s song comes to mind and now a Pina Colada is all that I want! Here’s my tasty twist of a recipe. Ahh – I can just hear the sound of the waves lapping on the shore and the joyous pounding of little feet running along the beach.

Ingredients:

– 2 oz white rum (Captain Morgan or Malibu are tasty options)
– 1/2 cup pineapple juice (or more to taste)
– 1/2 shot cream of coconut (the real stuff)
– 1/2 shot heavy cream

Directions:

Pour ingredients into a blender and add 1.5 – 2 cups of ice. Blend until smooth. Pour into a pretty hurricane glass (or any plastic cup will do!) and garnish with a pineapple wedge.
