Cocktail Hour: Pineapple ‘Rita

It’s not quite 5 o’clock yet — heck, it’s not even noon — but that doesn’t mean you can’t plan ahead for tonight’s hump day happy hour, right? Although summer may be winding down, I’m still savoring the season and digging into the sweet summer flavors while I can.

We bought a pineapple a few days ago and when I sliced it up, it was deliciously sweet — so perfect that you want to devour it all right then and there. Thankfully, I saved some chunks for a tasty treat that includes a little bit of tequila (ole!) and some zesty lime. Yep, it’s margarita time!


– Fresh pineapple chunks
– 3/4 cup of tequila
– 1.5 cups of orange juice
– 2 small limes (juice and zest)
– Ice cubes

In a blender, mix the pineapple chunks, tequila, orange juice, lime juice and zest. Pour over ice in a sugar-rimmed glass with a lime slice for garnish. Note: I like using orange juice with high pulp so it tastes like fresh oranges but you can use whichever OJ you prefer. If it’s a bit too strong for your liking, add a bit of water to the mix.

Does this remind you of a beach vacay or what? Feels like we should be sipping this seaside with our toes in the sand. Only two more days til the weekend… I’ll toast to that!
