Just returned from our beautiful Colorado vacay (so sad that it even had to end!) and now it’s back to the real world – laundry, work, finances…boo! But while we were enjoying the mountains, rivers and lakes of Steamboat Springs (Part II of Vacation Diaries coming soon!) we made a super easy breakfast casserole to fuel the whole fam for days of rays at the river.
– 1 16 oz. bag of frozen tater tots or hash browns
– 1 lb. of your favorite breakfast sausage
– 1 dozen eggs
– 2 cups cheddar cheese
– Salt and pepper to taste
Preheat oven to 375 degrees F. Brown the breakfast sausage until cooked. Grease a 9 x 13 pan and make a layer with the tater tots or hash browns. Whisk eggs together and pour over the layer of tots. Spread the sausage evenly atop the eggs then top generously with cheddar cheese. Bake for an hour or until the egg is set. Cut into individual portions and you have one hearty breakfast that is simply delish!
Bonus: This dish also saves well in the fridge – pre-cut portions for a quick bite during busy weekday mornings. Nuke an individual serving for about 45 seconds and you’re good to go!
This dish is also easily customized with any leftovers you may have in the fridge that you’re not quite sure what to do with: red bell pepper, ham, green onion, tomatoes – it’s all good in this casserole!
