With summertime comes a lot of al fresco dining with friends, family and loved ones and on occasion you offer or are asked to bring a dessert. One of my favorite go-to summer desserts is an apply berry crisp. This recipe is so perfectly simple becuase you can keep all the ingredients in your pantry and freezer and pull off a beautiful dish in no time at all.
– 1 16 oz. canned cinnamon apples
– 1 small bag of frozen blueberries
– 1/2 cup sugar or Splenda
– 1 cup white cake mix
– 1/2 stick of butter, softened to room temp
– 1/2 cup of walnuts or pecans, chopped (optional)
– 1/4 cup brown sugar
Preheat oven to 350 degrees F.
The amount of ingredients listed above works well in a 9s9 dish. Layer the apples on the bottom of a casserole dish. Mix the sugar with the blueberries and layer over the apples.
For the topping: In a separate bowl, divide butter and separate a teaspoon for later. Cut remaining softened butter into the cake mix until it is loose and crumbly. Cover the blueberry layer with the cake and butter mix. Melt the teaspoon of butter and mix with the brown sugar and either the chopped pecans or walnuts together. Cover the cake layer with the nuts.
Bake for 20 – 30 minutes at 350 degrees F.
This easy treat is perfect for year round but serve it up a la mode style (we love vanilla bean!) for a refreshing sweetness during summertime!
