Cocktail Hour: Jalapeno Lemon Spritzer

As you may have seen on Instagram, I tried my hand at a new summer cocktail last weekend and holy jalapeno — this is definitely one you’ll want to save for your next at-home happy hour. There’s nothing better than a refreshing drink in the summertime (especially down here in Texas) and rather than simply make a spiked lemonade which is generally my go-to favorite, I was feeling something with a kick.

– 1 jalapeno
– 1 large lemon
– Tito’s Vodka
– Lemonade
– Club soda or Sprite

Using a large glass with a top — such as a mason jar or something similar — combine 1 cup of vodka with slices of jalapeno and the juice of 1 lemon. Shake and let it sit for about 10-15 minutes. This gives the vodka just enough time to absorb the flavors of the lemon and jalapeno without being overpowering. If you like things spicy, let it hang out a little bit longer… it totally depends on your heat tolerance! (Note: I did not remove the seeds of the jalapeno because I tend to like the heat.)

Add ice cubes, 1 cup of lemonade, 1 cup of club soda or Sprite (depending on how sweet you want it to taste), stir and serve. Yes, it’s really that easy! The bright flavors of lemon with hints of spicy jalapeno combined with the bubbles of the club soda were so yummy, cool and refreshing on a hot day. I’m fairly certain this will be my poolside beverage all summer long. Cheers!
