This Memorial Day weekend we had quite the gathering at our house. With fifteen adults and eight kiddos, our place was packed. The hubby wanted the chance to further perfect his barbecue skills, so he smoked a brisket, chicken thighs, drumsticks, and Italian wedding sausage. Along with the array of meats was fresh corn-on-the-cob, uber cheesy mac ‘n’ cheese, baked beans and watermelon. It was a day filled with good food, good company and good times!
Now that I have you drooling, you need something light and refreshing to follow up a meal like that. Included in the mix were also really good very berry margaritas. Thankfully, my hubby’s kitchen skills also translate to the bar and he makes a killer drink! I begged him to let me post his fave margarita recipe and he happily conceded.
– 1.5 oz tequila
– 2 oz Cointreau (or any orange liqueur)
– 2 oz lime juice
– 2.5 oz strawberry simple syrup*
– Salt or sugar rim
*Strawberry Simple Syrup
– 1 cup water
– 1 cup sugar
– 1 cup fresh strawberries
Directions for Margarita:
Prepare glass by rimming with either salt or sugar (or both, if you’re like me). Add about a half cup of ice to a martini shaker. Add ingredients in the order listed above. Shake vigorously for about 15 seconds or so. Strain and pour over fresh ice in prepared glass. Garnish with a lime wedge and strawberry.
Directions for Strawberry Simply Syrup:
Bring water to a low boil, dissolve sugar in water. Cool slightly then transfer simple syrup to a blender and add strawberries. Blend until liquefied. Store in an airtight container in the fridge.
