This weekend I played hostess for the family to celebrate two birthdays and my hubby wanted to create the ultimate BBQ experience. He slow-smoked pork ribs, chicken and long-link sausage and I just had to create the perfect complimenting side – so southern and sweetly dreamy, creamed corn.
– 2 packages (16 ounces) frozen corn
– 1 package (8 ounces) cream cheese, cubed
– 3/4 cup shredded cheddar cheese
– 1/4 cup butter, melted
– 1/4 cup heavy whipping cream
– 1/2 teaspoon salt
– 1/4 teaspoon pepper
In a 3- or 4-qt. slow cooker, combine all ingredients. Cook, covered, on low 3 to 3-1/2 hours or until cheese is melted and corn is tender. Stir just before serving. Yield: 9 servings.
This recipe is simple and was so delicious! The family just raved about how it went perfectly with the smorgasbord of barbeque. The creamed corn was perfect just the way it was; but if you want to make it more interesting, add extras like bacon, chives or other spices such as thyme to cater to your taste buds.
