Easy Peasy Chicken Bake Casserole


Remember last week how I mentioned I had a perfect evening – complete with a super simple casserole recipe?

Well, here it is folks! Yes, you can make a delicious dinner tonight from ingredients you probably already have in your pantry or fridge! I loved that there was little prep to this dish and I didn’t have to dirty a ton of pots and pans.

1 lb. boneless skinless chicken breast (about 4 pieces)
1 tablespoon olive oil
1 cup diced onion
1/2 cup celery, diced
4 cloves garlic, minced
1 cup diced carrots
1 cup heavy cream
1 package of 90 second (pre-cooked) rice
1/4 teaspoon pepper

Topping Ingredients:
Panko or Italian breadcrumbs
3 T. butter (softened)


Slice chicken into large chunks and brown slightly in a pan. Set aside. Dice onion, carrots and celery. Add olive oil and garlic to the pan and saute until onions are slightly translucent. Add in heavy cream and season with pepper to taste.

In a 9×9 baking dish, lay out rice and layer the creamy veggie mix over the rice. Press in chicken pieces on top. Mix butter with breadcrumbs until it creates small pebbles and spread over casserole evenly.

Bake at 375 degrees Farenheit until bubbly and browned. Makes 4 servings. Bon appetit!
