Mango Salsa

I love adding toppings, salsas, sauces and such to my meals. Sometimes it really fancies up an otherwise simple dish. And one of my go-tos is homemade mango salsa. My family has made it as a side in the summertime for years but with a few additional ingredients, it really brightens up a variety of dishes!

Ingredients:
– 1 bunch of scallions
– 2 mangoes
– 1 jalapeno
– 1-2 vine tomatoes
– 2 limes
– 1 large avocado
– 1 handfull of cilantro

Simply chop all of the ingredients, throw them into a bowl, give it a good mix and add a pinch of salt to taste. As a Texan, I tend to kick things up a notch! So I leave the jalapeno seeds in the mix for a little extra heat. This is a perfect topping for eggs at brunch, burger for lunch or steak for dinner. Add it to your fried fish tacos for some yummy freshness, too! And let’s be honest… a spoonfull for a snack isn’t so bad either.
