One of my all-time favorite foods is sweet kugel. In my family, it’s something we have on holidays and special occasions. There are so many variations of kugel–some sweet, some savory–but this one is a family recipe from my aunt and one that my mother used to make all the time. We would eat it cold or warm, for breakfast, lunch or dinner, or sometimes just as a yummy snack.
For those who aren’t familiar with kugel, this recipe uses egg noodles. I know what you’re thinking… a sweet dish with noodles? Trust me on this one. I recently made a batch of this for nonbelievers and they all fell in love with this dish–many going back for seconds! Here’s what you need…
* 8 ounces of cream cheese
* 4 eggs
* 1/4 to 1 cup of sugar
* 8 ounces of medium egg noodles
* 1 cup of milk
* One stick of margarine or butter
* 1 cup of crushed corn flakes
* Melted margarine or butter to moisten
* Sugar and cinnamon to taste
First combine the eggs, sugar, milk and cream cheese in a blender. Blend on high. Boil the egg noodles on the shortest time. Drain well. Combine the liquid mixture with the egg noodles in a square 9-inch pan. Spread the topping mixture on top. Bake uncovered at 325-350 degrees for approximately 1 hour.
Although the recipe doesn’t call for it, you can add raisins to the wet mixture before baking. Cinnamon, sugar, raisins… it’s perfect! So save this recipe for a rainy day when you want something to fill your belly and kitchen with warm, sweet, sugary goodness. Happy baking!
