Honey Cake with Caramelized Pears

For some (myself included), today is the start of a new year. A chance to reflect on the past year and celebrate the one to come. And with most celebrations in our lives, food takes a front row seat. Last night, we had a delicious celebration with family and friends to welcome the new year surrounded by laughter and love. The host graciously treated guests to dinner and guests were asked to bring desserts. That’s when I came across Martha Stewart’s Honey Cake with Caramelized Pears. This gooey dessert with fresh sweet fruit seemed the perfect fit for our Erev Rosh Hashanah meal.

Since the evening celebration happened to fall after a busy workday, I was limited on prep time. So on my way home from the office, I popped by the local specialty foods store and picked up a honey cake… YUM. While it probably wasn’t as delicious as a freshly-baked, warm cake from my own kitchen, it certainly did the trick. I found some juicy red organic pears and headed home. With a little sugar and a lot of love, those pears turned into the best topping for my little honey cake. It was quick and easy and turned the cake into quite the yummy treat. Next time, I promise not to cut corners with a store-bought honey cake but I have to say, in a pinch… it was perfect!
