Watermelon is pretty much the fruit of the season in the south and what better way to pay homage to this juicy, delicious fruit than by incorporating it into dishes throughout the summertime! Here’s a recipe that I have made several times and it always seems to be a fan favorite. Plus, with just a few fresh, colorful ingredients, it’s super simple to make and is the perfect salad for any BBQ, picnic, summer holiday bash or brunch. Happy summer!
* Watermelon squares
* Heirloom tomatoes cut into bite-size pieces
* Red onion slices
* Fresh herbs: mint, basil, parsley and chives
* Feta cheese crumbles
* Extra virgin olive oil
* Pepper to taste
